Nicola potatoes are uniform tubers with an elongated, oval to oblong shape. The skin is smooth, thin, and light yellow, with a few shallow eyes. Underneath the skin, the flesh is firm, dense, and golden yellow. Nicola potatoes have a mild, nutty, and earthy flavor with a waxy consistency that develops into a smooth, fine-grained finish when cooked. These potatoes are best suited for boiling, baking, and roasting. The tubers also retain their shape when heated due to their low starch and high moisture content. An excellent source of vitamin C, B6 and potassium.

Description

Cooking – Good for Boiling, baking and roasting

Planting –  Plant in rows 12-14 inches apart, sow pieces of seed potato 3-4 inches deep. Larger potatoes can be cut prior to planting. Ensure there is an equal number of eyes on each cut piece.

Growing – Hill plants once they begin to emerge from the soil.  Continue to pull dirt up around the plants as they grow.  Keep the soil moist, but not overly saturated during the growing season.  Containers may need daily watering.

Harvest –  Flowering is often an indicator young potatoes are almost ready to harvest.  For winter storage, potatoes should remain in the ground until light frosts or natural maturity dry down the leaves and stems.
